Aloo (Potato) Stuffing

Hi everyone! It’s been so long…I know! I am going to be cooking real soon and post some awesome recipes! Look out on my Facebook page and Instagram for those updates!

While I get the recipes together, here is a classic recipe that is always a hit for appetizers or a quick snack when that unexpected guest pops on over! My friends and family LOVE this!

Baked Aloo Samosas are my favorite snacks to make on Sundays and keep in the fridge (or freezer to keep longer) for a snack after I get home from work! Who doesn’t love potatoes!

Aloo Stuffing

Aloo (Potato) Stuffing

Servings: 8 servings

Total Time: 15 minutes (Cook Time 10-12 minutes)

Ingredients:

6 Potatoes (Russet)

1/2 tsp. Turmeric

1 tsp. Cumin

1 Tbsp. Red Chili Powder

1 tsp. Coriander Powder

1/2 tsp. Black Pepper

1/2 Red Onion (diced)

Salt

1/2 a Handfull Cilantro

Directions:

Place the potatoes (washed, rinsed, and scored with a knife) in a plastic bag (not a Ziploc bag) and place in the microwave for 10 – 12 minutes. (or to desired mushiness)

Once the potatoes are done, peel the skin off and place them in a mixing bowl. Take a fork and mush them to desired mushiness (a masher may be faster, if you have one)

Next, add in the spices including the salt and pepper, but not the cilantro yet!

Once everything is mixed together, take a small taste to see if the salt is enough.

If it is enough, add in the cilantro and mix well.
