Roasted Corn Salsa

 One of my favorite items to eat is corn! There’s still that debate about corn being a grain or vegetable. Whatever it may be, I love it! Anything that has corn in it just automatically tastes amazing. Well…at least to me it does!

This salsa tastes good on a lot of different dishes or as a side for some. I added this is a topper for my Tacos de Pollo a la Mexicana and as a side for my Baked Tandoori Chicken.

 Roasted corn salsa is an easy dish to make and is great for a party of any size.

Roasted Corn Salsa

Roasted Corn Salsa

Servings: 8 Servings

Total Time: 25 minutes

Ingredients:

2 Cups Corn (frozen is what I used)

1 Jalapeno

1/2 Onion (medium, diced small)

1 Tbsp Salt

1 tsp Red Pepper Powder

1/2 Lime (juiced)

Directions:

On a non-sick pan, roast the corn kennels until desired color (or bake the corn at 350 for 10 minutes)

Mix in the jalapeno and onions. Then add the salt, pepper, and lime juice. Serve
