Pancake Mix Cookies

I have a huge bag of Krusteaz Pancake Mix, you know, the ones you get from Costco! I was craving cookies and I didn’t want to go to the store to buy them nor did I want to spend more money. I did my research and saw that there were many people online who have experimented with pancake mix for cookies. Surprisingly, the cookies came out very tasty. You can use the mix and add additional ingredients to make different flavored cookies. I will definitely be experimenting more with this.

Pancake Mix Cookies

Servings: Depends on Cookie Size

Total Time: 15 minutes

Ingredients:

3 cups powdered pancake mix

1/2 cup sugar

1/2 cup brown sugar

1 egg

1/3 cup water

2 tsp. vanilla or almond extract

Directions:

In a large mixing bowl, combine all ingredients.

Drop on cookie dough onto a baking sheet lined with parchment paper.

Bake at 375°F for 8 minutes or until edges are slightly browned.

Remove from oven and flatten cookies with spatula.

Return to oven and bake for an additional 2 minutes or until the edges are slightly golden.

Remove from oven and let cool.
