Simple Chicken Fried Rice

Every time I go to a Chinese restaurant, my family orders fried rice. I like fried rice, but was never on that fried rice hype. I do however, appreciate when the fried rice is just outstanding! I have had some moments of WOW with fried rice when gone to a few spots in San Francisco. I wish I could remember the names of those restaurants. Next time I go back I will definitely write it down!

I don’t generally have the urge for fried rice, but for some reason, today I did! I had to make chicken fried rice! So you know what?…. here it is!

Simple Chicken Fried Rice

Simple Chicken Fried Rice

Servings: 10 Servings

Total Time: 30 minutes

Ingredients:

2 lbs. Chicken Thighs (cut into small 1-inch pieces)

2 Cups rice (cooked – I used Brown Basmati rice)

1 Onion (medium, diced)

2 cups Frozen Mixed Vegeatables (Peas, Corn, Carrots, and Green Beans mix Thawed!)

2 eggs (lightly beaten)

4 Tbsp Soy Sauce

2 Tbsp Mirin (Rice Seasoning)

2 tsp White Wine Vinegar

3 Tbsp Olive Oil (1 Tbsp for when rice is added)

2 tsp Black Pepper

2 tsp Salt

2 tsp Garlic Powder

1 Tbsp Garlic (minced)

1 Tbsp Sriracha Sauce or Red Pepper optional if you want a little kick!

Directions:

In a medium sauce pan take 2 Tablespoons of oil and over medium heat, saute the onions and mixed veggies for about 5 minutes)

Toss in the cut chicken in and saute till all sides look cooked (Don’t cook all the way!)

Move everything to one side of the pan, add the lightly beaten eggs, and scramble them. Once the eggs are cooked, mix it in well to the chicken and mixed veggie mixture.

Now add the rice, soy sauce, and mirin into the pan and lower the heat to medium until everything is mixed in evenly. Bring the heat back up to medium heat and keep cooking until satisfied with the color of the fried rice.

Serve hot!
