Mango Salad

Who doesn’t love mangoes? I would have never thought I would enjoy mangoes in a salad, but when I tried it I couldn’t stop eating it! Mangoes and a tad bit of spice…OOO WEEE Yummy!

Mango Salad

Mango Salad

Servings: 8 servings

Total Time: 20 minutes

Ingredients:

1 Mango (ripe – peeled, pitted, and diced)

2 Garlic cloves (crushed and minced)

1/2 Red Onion (medium and diced)

1/2 Shallot (small and diced)

1 Jalapeño chile minced (include seeds for a hotter taste)

1 Cucumber (small and diced)

1 Red Bell Pepper (diced small)

1 Avocado (small and diced)

4 Tbsp Cilantro leaves (fresh and chopped finely)

1 Tbsp Olive oil

3 Tbsp Lime juice/lemon juice (fresh)

Salt and pepper to taste

Directions:

Combine all of the ingredients in a bowl.

Season to taste with salt and pepper.

If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some more diced avocado and a tsp of cane sugar

I paired it with my Lemon and Garlic Tilapia (Baked)
