Gazpacho

Gazpacho always looks and tastes like salsa. Gazpacho is a cold tomato based, raw vegetable soup (Spanish) that originated in the southern region of Spain called Andalusia. This cold soup is consumed during the summer season throughout places like Spain, Portugal, and Latin America.

Regardless of what I think, it is quite addictive!

Gazpacho

Servings: 15 servings

Total Time: 10 minutes

Ingredients:

3 cups Plum Tomatoes

1 1/4 cups Onion

1 cup Red Bell Pepper

1 tsp Garlic (minced)

2 cups Tomato Paste

2 Tbsp Avocado Oil

2 Chilis (or 3 Jalapeno Peppers)

3 tbsp Cilantro (minced)

2 tsp Thyme (minced)

2 tsp Oregano

2 cups Crumbled Croutons (Soaked in water for five minutes, drained)

1/4 cup Red Wine Vinegar (or White if you don’t have Red)

1/4 cup Lemon or Lime Juice

Salt as needed

1 tsp Cayenne Pepper (or as needed)

1/2 cup Chives or Scallion Greens (sliced thinly)

Directions:

Put all the tomatoes into a blender. Blend until wanted consistency. I did mine until the tomatoes were practically mushed. Then added the rest of the ingredients until each were finely diced.

Put into desired containers and chill overnight.
