Champagne-Cider Jell-O Shooters with Strawberries

One of the desserts at the bridal shower I made was the Jell-O Shooter. If only the heat didn’t melt them into a juice…

The weather was insanely hot and dry the day of the bridal shower! Not enough places for the food and desserts. No shade really until afternoon fell, which by then, was too late!

Anyways…at least I got to get in a few photos! Reminder to self: never serve jell-o shooters during a lunchtime event!

Champagne-Cider Jell-O Shooters with Strawberries

Servings: 10 servings

Total Time: 6-8 hours (or chill overnight if possible until jello is set)

Ingredients:

3 tablespoons (3 envelopes) unflavored gelatin powder

2 cups cold water

1 cup sugar

1 1/2 cups cold champagne

1 1/2 cups cold ginger ale

2 cups sliced fresh strawberries

Directions:

Mix the jello and cold water in a medium sized bowl and allow to absorb the water for 2 minutes. Bring the water to a boil over high heat, stirring until gelatin powder until it has completely dissolved. Refrigerate for 15 minutes.

Stir in champagne (or sparkling cider), sugar, and ginger ale, until the sugar has dissolved. Then refrigerate for another 30 minutes or until the gelatin has just slightly thickened.

Then fold in the strawberries and spoon into 7 to 10 individual molds or a 7-cup mold. Refrigerate until the jello is set (overnight if possible).

Leave in glass or unmold and serve!
