Savory Chili Fully Loaded (Vegetarian or Meat)

This past weekend I had a group of friends over at my place to watch the NFC Championship game, which was amazing! As I had last year, I made a fully loaded, tub of turkey chili (you can substitute the minced meat for more beans and/or tofu). It was a hit! Turkey is a leaner meat than chicken. Its a healthier choice for a healthier diet! No saturated fats…. even better!

Chili is an easy, fast, and tasty dish to make for a large group of people and one of my go-to dishes for sports game meals. Of course pairing the chili with other dishes such as grilled chicken, black bean corn salad, or pizza. Vegetarians of course can pair it with baked zucchini fries, stuffed bell peppers, or sweet potato fries.

Savory Chili Fully Loaded:

Servings: 6-8 Servings

 Total Time: 1 hour 20 minutes

Ingredients:

3 tbsp Olive Oil

2 lbs. Minced Turkey (Veggie substitute – three cans of Chili beans or Tofu or Soy Bean)

1 medium Onion (diced)

1 Green Bell Pepper (diced, small)

1 Red Bell Pepper (diced, small)

3 cloves of garlic (I love garlic so I put more in) finely chopped

1/4 cup Chili Powder (more to taste)

2 tsp Oregano (dried)

1 1/2 tsp Cumin

3 cans Kidney Beans (1 Black Beans) Rinsed

2 Zucchinis

2 large Potatoes (diced) optional

1 can Diced Tomatoes

1 small can Tomato Paste

1 1/2 cup Chicken Broth

2 cans Corn Kennels

Shredded cheese to top it off

Directions:

Heat olive oil in a large pot over medium-heat. Throw in the turkey and brown the meat for about 10 minutes, continually breaking the meat apart and making sure both sides are cooked. Throw in a little bit of salt and pepper and half of the cumin (for the vegetarians – you can cook the tofu and break it apart just as you would with the meat). Remove the meat (or tofu) and transfer to a paper towel lined dish for later use.

Heat the remaining oil in the pot on medium heat and throw in the onions, garlic, zucchini, and bell peppers (and potatoes if using). Saute for about 5 minutes. Stir in the remaining seasonings and cook for 1 minute more.

Add the meat (or tofu) back into the pot. Add the beans, tomatoes, tomato sauce, corn, chicken broth (or vegetable broth), and salt. Simmer for 40 minutes. Add more chili powder as needed. Serve when done!
